Gluten-Free Oatmeal Chocolate Chip Cookies Recipe


Ingredients:

3 cups of gluten free old fashioned oats

1 1/2 cups of gluten free old fashion oats, grounded up in a food processor till you get flour consistency

2 tablespoons cornstarch

1 teaspoon gluten-free baking powder

1 teaspoon cinnamon

Pinch of salt

1 teaspoon maple syrup

2 sticks unsalted butter, room temperature

3/4 cup granulated sugar

1/2 cup packed light-brown sugar

2 large eggs

2 teaspoons pure vanilla extract

3/4 cup chocolate chips

Instructions:

  1. Whisk together ground oats, cornstarch, cinnamon, baking powder, and salt.

  2. In a large bowl, beat butter and sugars until light and fluffy. Beat in eggs and vanilla. With mixer on low, add oat mixture, beating until combined. Add in the maple syrup, and chocolate chips, and 3 cups of whole oats.

  3. In batches, drop dough in 2-tablespoonful mounds onto a parchment-lined baking sheet, 2 inches apart. Bake until cookies are golden brown at edges, about 15 minutes.
